It’s always fun to construct your meal at the table and there’s nothing more fun than fajitas. My fajita recipe is quick to prepare and completely delicious.
Prep Time – 15 minutes
Ingredients – serves 2
2 medium free-range chicken fillets sliced into strips
1 red onion roughly chopped
2 to 3 crushed garlic cloves (depending on how much you like garlic)
1 tsp cumin powder
1 tsp cajun spices
1 tsp paprika
1 tbsp coconut oil
1 red and 1 yellow pepper thinly sliced
1 handful mushrooms thinly sliced
Method
Prepare the guacamole in advance and refrigerate.
Mix the chicken, garlic, spices and a generous amount of Himalayan pink rock salt (optional).
Heat ½ the coconut oil in a pan and sauté the chicken until cooked through. Remove from the pan.
Add the rest of the oil, heat and fry the onion for around 1 min before adding the garlic, peppers and mushrooms.
Warm wholemeal or gluten free wraps for 5 minutes.
Serve with spinach leaves, grated cheddar, a dollop of natural yogurt and add some fiery green jalapeños if you like your fajitas hot.
