
Looking for something quick, simple and healthy in the morning before you rush out the door? Bircher muesli is the perfect breakfast for busy people. It only takes 5 mins to prepare the night before, but delivers a bowlful of nutritious goodness to get you through the toughest morning.
Ingredients
100g porridge oats
2 tbsp wheatgerm
large pinch of cinnamon
125 ml apple juice
2 of your favourite apples – I use Pink Ladies
100 ml natural yogurt
1 tablespoon maple syrup or good quality honey
125 ml water
Method
Put the oats, wheatgerm and cinnamon in a bowl and add the apple juice along with 125 ml water of water. Mix everything well, cover and leave in the fridge overnight.
The following morning grate the unpeeled apples into the muesli and stir in the yogurt. Add nuts and seeds of your choice and a few of your favourite berries. Enjoy!
