Grilled fresh pineapple slices with cinnamon are absolutely delicious served with steak, burgers or simply on their own as a barbecued dessert. You can either place the pineapple slices straight onto the grill or thread them onto pre-soaked wooden skewers first. This is quite a sweet, decadent dish so view it as a special barbecue treat.
1 whole pineapple, peeled, cored and cut into wedges
1 cup of unrefined brown sugar
1 tsp cinnamon
Mix the cinnamon and brown sugar together and pour into a food bag. Add the pineapple wedges and shake to coat the fruit with the sugar, cinnamon mix. Refrigerate for around 30 minutes after which time the sugar and cinnamon will have caramelised with the juice from the pineapple
Remove the pineapple wedges from the bag and place onto the barbecue. Cook for around 5 mins each side.
