Dinner Beef and Broccoli Stir-Fry (Serves 2)

Ingredients

1 head of broccoli cut into spears

2 x 300g sirloin steaks (or fillet steak for a real treat)

2 tsp coriander seeds

Splash of olive oil

1 red onion peeled and finely sliced

2 cloves garlic peeled and finely sliced

1 thumb-sized piece of ginger peeled and finely chopped

3 tbsp soy sauce

1 tsp sesame oil

1 tbsp honey (optional)

1 sliced red chilli (don’t get seeds on your fingers and avoid touching eyes afterwards) 2 portions of bulgur wheat

Method

Place the broccoli spears into a heatproof bowl and cover them with boiling water. Add a good pinch of salt and leave for 10 mins. Drain and put to one side. Slice the steaks into strips and season with salt and pepper. Crush the coriander seeds in a mortar and pestle

and cover the steak slices. Heat a wok or large frying pan until very hot. Pour in a splash of olive oil and add the onions. Fry for a couple of minutes until the onions have softened then add the garlic and ginger and fry for another minute. Stir-fry the beef for a couple of mins. Add the broccoli and cook for another 2 mins. Pour in the soy sauce, sesame oil and honey. Toss in the pan until everything is well coated. Serve with bulgur

wheat. Serve with sliced red chilli and a splash of lime for a bit of extra kick!

Handy Tip: To cook the bulgur wheat simply place in a saucepan and add boiling water. Cover with a lid and it will self-cook in under 15 mins.
