
Chia seeds have loads of health benefits and are classed as a superfood. This recipe gives your digestive system a fantastic start to the day and is great for people who live busy lives. It might take a bit of getting used to as it has a texture like tapioca pudding, so if you find that it’s not for you can sprinkle the seeds on your porridge, cereal and soups so you can still benefit from their goodness.
Ingredients
400ml almond milk
8 heaped tbsp chia seeds
2 tbsp maple syrup / honey (optional)
Method
Pour almond milk equally into two ready-to-serve glass jars / bowls. If you don’t have either, then Tupperware containers will do the trick.
Put half the chia seeds into one bowl and half in the other. For a sweeter taste add either maple syrup or honey (local if possible) and stir.
Leave in the fridge to soak overnight. That’s it – virtually no prep for a breakfast that tastes wickedly indulgent – almost like a pudding! Add your favourite fresh fruit and nuts to pack an extra punch.
