This is a quick and simple recipe but delivers the nutrients to start your day. If you don’t like rye bread toasted, then try it with Irish soda bread which is preservative free and 100% wholemeal. It does however, contain wheat so if you follow a gluten / wheat-free diet then opt for the rye toast.
1⁄2 ripe avocado
1 slice rye toast
Pure and simple – slice your avocado onto your hot, crisp toast.
There are lots of different variations for avocado on rye toast and here are some of my favourites.
• Add full-fat butter, sea salt or Himalayan rock salt along with cracked black pepper.
• Add a small amount of full-fat butter, a splash of freshly squeezed lime, chilli flakes and chopped coriander for a spicy start to the day.
• For a weekend treat try sliced avocado on toasted Irish soda bread with a couple of slices of smoked salmon, a splash of freshly squeezed lemon juice and cracked black pepper (or 3 / 4 slices of maple-cured streaky bacon for a real treat).
Another option which is my absolute favourite weekend breakfast is avocado with maple- cured streaky bacon and poached eggs.
